Wagashi (和菓子) is a type of traditional Japanese confectionary, often served with green tea. It is typically made using plant-based ingredients like mochi (glutinous rice), red or white bean paste and fruit, making it mostly vegan friendly.

Seasonal ingredients are utilised to create special varieties of wagashi only available at specific times of the year, like cherry blossom in spring or chestnuts in autumn. With just a few simple ingredients, the ingenious designs of wagashi are often intricate and are made to reflect the season not only in their taste, but also texture, colour and shape. Some varieties can only be found in specific regions, produced using local ingredients and flavours. Often seen beautifully packaged in train stations or department stores, wagashi is a popular souvenir to take home after a business trip or holiday.

In this workshop, Noriko Jazayeri from Wa cafe an-an will give a short introduction to wagashi, and participants will learn to make wagashi drawing inspiration from the season of spring. Light snacks will be provided. Tea and coffee will be available to purchase from Toconoco at an additional charge.

Wa café an-an is a Japanese café and restaurant in Hove, East Sussex. Their speciality is freshly made traditional wagashi, which vary season to season, using mostly organic ingredients and produce available locally to reduce food miles. A variety of café menus are also served and they host regular events and workshops, including a twice monthly Japanese style afternoon tea serving Shojin Ryori and 6 homemade seasonal sweets, which is suitable for vegans.

Toconoco is a child-friendly café in East London, serving delicious home-cooked Japanese food. Hidden in a sun-trapped courtyard overlooking the Kingsland Basin on the Regent’s Canal, Toconoco is a little sanctuary filled with tea, cakes, snacks, meals, lunch boxes and juices – with space to eat, drink and think, bringing a bit of Japanese home life to London.
